And for one night only, we invite our guests to savour an extraordinary flight of Islay malts — a heartfelt showcase curated exclusively for this year’s Spirit of Toronto in our very own Islay Lounge.
Throughout the evening, our lounge host Régis Lemaitre will open one remarkable bottle from each of Islay’s ten Grand Cru distilleries — offering a rare opportunity to experience the full range of Islay’s distinctive, unmistakable character in a single night.
We start with Port Ellen.
The journey begins with a distillery few have had the privilege to taste: a treasured pour of Port Ellen 1981 from this legendary silent still.
From there our tour of Islay’s smoky treasures continues around the island as we open rarities such as the Lagavulin 1980 Distillers Edition — a true masterpiece from one of Islay’s most revered distilleries — and a rare ceramic jug of Bruichladdich 1984 bottled for Germany, alongside sleeper hits such as an audacious young Caol Ila with a Madeira finish, and a fruit bomb of a Bowmore 18 Year Old at cask strength.
Perfectly complementing the smoky brilliance of Islay, guests can enjoy freshly shucked oysters and lively banter at our Oyster Bar, hosted in the Islay Lounge by oyster sommelier Patrick McMurray aka ‘Shucker Paddy’.
